Background

On the sunny beach of Limassol in southern Cyprus lies the luxurious 5-star Four Seasons Hotel. The luxury resort features over 300 elegant rooms, suites and Residences, a total of six restaurants, which are among the best in Cyprus, 4 busy bars and extensive banqueting.

The hotel also offers an exclusive Spa and comprehensive leisure facilities, including sauna, steam rooms, a fully equipped gym, indoor and outdoor pools as well as a kids club and fashion boutiques.

Challenges and Requirements facing the Hotel

In 2018, Hotel management took many decisions regarding sustainability, a major one of which was to reduce paper in as many areas of the hotel as possible and to go paperless wherever we could.

In addition the hotel was also transitioning from the traditional HACCP certification to ISO 22000, so it was the ideal opportunity to start looking for a digital system to manage HACCP requirements.

After a lengthy vetting process of 4 different systems all of which were initially sourced via the internet, Management opted for Kelsius’ FoodCheck system as it was offering the closest match to their requirements.

FoodCheck Paperless HACCP System

The Kelsius HACCP solution is a fully automated, paperless system which ensures full compliance with statutory food safety requirements. Kelsius wireless temperature sensors monitor and record temperatures in all refrigerated areas and freezers. If a measured temperature rises above a set limit, an alert is triggered. This alert can be transmitted as a text message, email and via local visual alarms.

In addition to continuous temperature recording the Kelsius system also provides time and task management by recording key activities such as deliveries, cleaning tasks, hot & cold food probing and deli traceability. All records are securely stored on the Kelsius website and each retailer can access their records at any time from any Web-enabled PC or laptop. HACCP reports can also be automatically emailed as required.

Conclusion

Kelsius assisted the Four Seasons in removing paper from their Kitchens by removing Delivery sheets, probing sheets such as First Cook, Hot Holding and Cold Serve Over records. Cleaning tasks schedules and paper records of manually recorded Fridge and Freezer temperatures have also been permanently removed from operation. This assisted management in drive to go paperless and promote sustainability.

The digitalization of the HACCP system in the Four Season Limassol has helped drive the standards of excellence that is central to Management’s operation ethos. The Hastings Group
The Hastings Hotel Group is the largest independent hotel group in Northern Ireland with seven luxurious properties across the province. This family owned company was established in the late 1960’s. Sir William Hastings founded Hastings Hotels in 1966 by with the purchase of the Stormont and Adair Arms Hotels. In 1971 he bought a group of six railway hotels and set about building his business against an uncertain background.
The Slieve Donard Hotel in Newcastle is the only hotel of the original six which is still operating as a hotel today. Mr. Hastings had always been an optimistic man and continued to reinvest whenever he could in his hotels. Proof of this confidence came when he purchased the Europa hotel in Belfast in 1993 as a bombed-out wreck. He proceeded to spend £10 million on rebuilding the hotel, transforming it into to the magnificent City Centre landmark it is today and has become one of Ireland’s finest and most famous hotels.
The company continues to expand in line with the growth in tourism across Northern Ireland and in 2015 invested in the purchase of Windsor House, a renowned building in central Belfast which it has redeveloped and reopened as the Grand Central Hotel Belfast bringing with it 300 new hotel bedrooms to the heart of the city.
It has not been an easy fifty years for the Hastings Group and despite numerous setbacks and obstacles over the years, the company has continued to grow and grow.

The Management of the Hastings Group first became aware of the Kelsius system as it has been in operation in the Merrion Hotel in Dublin. The Hastings Group own a 50% share in the Merrion and were suitably impressed by what they saw.
This led to the installation of the FoodCheck system in the Europa Hotel in early 2017 in order to get a closer look at the benefits the paperless system. Management observed a reduction in labour time spent on HACCP and a reduction in the risk of human error. This experience further enhanced Management’s opinion of FoodCheck as they were able to experience on a daily basis the benefits the system can offer.
In the summer of 2018 it was agreed between Kelsius and the Hastings Group to begin the rollout of FoodCheck across the entire group. The newly opened Grand Central hotel was newly opened during this period and was the first to be installed.
Work began on the Group-wide rollout in mid-September with all sites installed, trained and using the system within 3 weeks.

Centra Rochestown opened in 1999, located on the busy Rochestown road in County Cork. With a petrol station, busy deli and convenience store available, footfall through the shop is very high.
Owner Mary McGroarty was very quick to recognise the important of the fresh food offering which accounts for a significant portion of turnover.

Strategic Partnership with Musgraves
Musgraves introduced Kelsius cloud-based food safety monitoring system in their Store network with an official agreement concluded in September 2015. Kelsius, having worked with numerous individual stores within the Musgrave organisation and having completed a successful trial, agreed a strategic partnership with Musgrave to offer store owners all the benefits of FoodCheck.
“Implementing rigorous food safety and quality controls is fundamental to SuperValu and Centra. The Kelsius’ FoodCheck system ensures excellence in food safety monitoring and we are delighted to be able to offer this to our retail partners.” said Ray Bowe, Head of Food Safety for the Musgrave Group. The system has since been rolled out to over 125 retail outlets throughout Ireland with new stores signing up weekly. This Kelsius system removes the risk of HACCP-related errors, in turn protecting customers from the effects of food-related hazards and the retailer from the risk of litigation. Conclusion
FoodCheck greatly reduced the amount of time spent on HACCP for Centra Rochestown by greatly reducing manual checks of Fridges and Freezers, removing the need to print and complete paper records as well as streamlining and reducing the time spent probing food, recording deliveries & cleaning tasks and audit preparation.
The store has a complete and enviable record with regards to both HSE and EIQA audits. Since the store has implemented the FoodCheck system they have achieved and retained Emerald status with their EIQA records.
With the removal of paper to migrate to the electronic system, Mary found that all records are date and time stamped and cannot be retro-completed, preventing falsification. FoodCheck has a number of built in feature which help reduce the risk of human error all of which assisted with their immaculate records with audits.
With sensors continuously monitoring all cold storage units and with alerts notifying of any unsafe temperatures, Mary had peace of mind they were in full control of all food safety practices. With these failsafe procedures in place the risk of stock loss or a food safety incident were effectively removed making life easier for staff, management and owners.
This saves time, and allows staff to focus on the more important tasks at hand such as concentrate on the quality of food provided and assisting customers.

Food Hygiene Rates ‘Scores on the Doors’ are now mandatory in Northern Ireland. Here’s how FoodCheck can improve your rating

The Food Standards Agency of Northern Ireland has formally implemented the Food Hygiene Rating Act (Northern Ireland) 2016 meaning that by law all Food Service businesses must display the score obtained by local district councils. Scores range from 0 to 5, with 0 being lowest and 5 being highest.

This replaces the voluntary system that had been in place since 2011. It is anticipated by the Food Standards Agency that 90% of food businesses will be displaying their stickers within two months.

This development will give the public full transparency of a business’s Food Safety rating and place a greater emphasis on Food Safety for all food business Owners and Managers.

This means that restaurants, hotels, supermarkets, cafes, shops or takeaways that sell food will be required to display their ‘score on the door’ mark. Hospitals, Schools and Care Homes are also not exempt and will also be required to take action and display their rating.

How is my score calculated?

As per the scoresonthedoors.org.uk website “A food safety officer from the local authority where the business is located inspects a business to check that it meets the requirements of food hygiene law. The officer will check:

  • The condition of the structure of the buildings. The cleanliness, layout, lighting, ventilation and other facilities
  • How the business manages and records what it does to make sure food is safe

The hygiene standards are then rated on a scale of 0 – 5 where 5 is highest.

Kelsius agree deal for World’s largest deployment of FoodCheck

Digital Food Safety company, Kelsius, is celebrating after landing a deal with Reading University to install the largest single deployment of its FoodCheck Paperless HACCP system.

The deal will see 17 individual FoodCheck systems covering every element of food production and food service rolled out across the entirety of Reading University, which is comprised of three separate campuses- Whitesbridge, London Road and Greenlands.

FoodCheck ensures the highest levels of food safety are adhered to by staff and management, while also guaranteeing maximum product safety allowing for complete food safety control. In addition to the safety element, it also massively reduces the costs associated with maintaining these standards – in some instances up to 30 hours per week.

Kelsius will deploy 20 FoodCheck tablets and over 100 temperature sensors to enable Reading University comply with regulations in the complex area of food safety.

Applegreen awards Kelsius contract for FoodCheck across Ireland’s largest Independent fuel retailer’s food offer.

All data is stored electronically. Alerts of non-conformance are generated automatically by the system and sent as text messages to supervisors / managers. Ultimately, this results in a more efficient and cost-effective process allowing staff to spend more time on customer service in customer facing roles as opposed to ‘behind the scenes’ in convenience stores, restaurants, hotels, fast-food outlets or catering companies.
